After wrapping up the K-beauty tour in Myeong-dong, we headed for dinner at one of Seoul’s classic late-night destinations — a well-known Dakhanmari restaurant.
Despite the late hour — close to 10pm — the dining room was packed with incredible energy, full of locals and tourists alike.
As the name suggests (dakhanmari meaning “one whole chicken”), the pot arrives generously loaded with chicken and spring onion. The ritual begins: first, savoring the concentrated, clear broth. Then in goes the rice cake (tteok). And in the final act, noodles (kalguksu) absorb what remains — the full depth of flavor.
Building Your Own Signature Sauce

The real joy of this dish is crafting your own dipping sauce. Soy sauce, vinegar, mustard, pepper, gochujang — balance them to your own taste, and you create a flavor that becomes your personal key to unlocking the chicken. That hit of spice and complexity is what makes this dish so addictive.
The chicken itself is excellent. But there’s something even more satisfying about eating the rice cake and noodles that have absorbed every drop of broth. This culture of gathering around a shared pot — building and finishing it together — has a way of bringing a family closer.
